EGG ROLL IN A BOWL
Ingredients:
2 Tbsp sesame oil
2 Tbsp olive oil
1 Tbsp rice wine vinegar
1 Tbsp low-sodium soy sauce
1 lb ground chicken
1/2 tsp ground black pepper
6 C coleslaw mix
8 green onions (chopped)
Add a little oil & your ground chicken to a large skillet, break apart & cook until it's cooked all the way through. In a separate bowl, whisk together the sesame oil, olive oil, rice wine vinegar & soy sauce. Next, stir in coleslaw mix to the pan, cook until cabbage and carrots start to be tender (about 3 minutes) & add in your sauce, mixing well! *Tip :: Don't cook the vegetables too long, or they'll turn mushy! Finally, garnish with chopped green onions & enjoy!

HAWAIIAN CHICKEN WITH COCONUT RICE
Ingredients:
Hawaiian Chicken:
1 1/2 lbs chicken (breasts or tenderloins)
1 fresh ripe pineapple
1/4 C pineapple juice
1/4 C soy sauce
3 Tbsp ketchup
2 Tbsp brown sugar
1-1 1/2 Tbsp minced garlic
2 Tbsp oil
2 Tbsp honey
Coconut Rice:
1 C rice (we love basmati or jasmine)
3/4 C coconut milk (*Tip :: shake can well before pouring in!)
3/4 cup water
First, you'll blend pineapple juice, soy sauce, ketchup, brown sugar, garlic, & oil in a blender & blend well to create the marinade for the chicken! Then add chicken & marinade to a ziplock bag, mix well & make sure the chicken is covered with marinade. Marinate for anywhere between 1-24 hours. *Tip :: The longer, the better!
Once the chicken is done marinating, add some oil to your pan & cook chicken until all the way through. *Tip :: I like to butterfly the chicken to make it a little thinner & to get a nice sear on both sides! Once the chicken is done, drizzle honey on both sides of the tenderloins & remove from the pan! Lastly, core & slice pineapple into 1/2-1 inch thick slices & grill on both sides in the same pan you cooked the chicken in for added flavor.
For the coconut rice, you'll bring the rice, coconut milk, & water to boil in a pot on the stove. Once boiled, bring to medium low heat & cook covered for 17-20 minutes, then remove from heat. *Tip :: Cover with a TIGHT lid & do not open while it's cooking!
Serve chicken & pineapple on top of your coconut rice, & garnish with fresh parsley! Enjoy!
AT HOME HIBACHI STEAK & VEGGIES
Ingredients:
Steak (whichever kind you like best!)
1-2 Tbsp butter
Your favorite Teriyaki sauce
For this recipe, first cut up your steak into bite size pieces. *Tip :: Make sure your knives are sharpened to make this step so much easier! Next, turn your heat to medium high or high (depending on your stove), add in butter to your pan & add in steak. Once your steak is mostly or all the way cooked, add in some of your favorite teriyaki sauce! (Add in as much or as little as you like!) Let it cook down & get nice & caramelized!
SAUTEED VEGGIES (Optional side dish)
Bag of fresh Stir Fry Blend
1/4 C water
Your favorite teriyaki sauce
A few pinches of ground ginger
While the steak is cooking, add veggies & water to medium pan & cook 4-5 minutes, stirring well! Then add in your desired amount of sauce & ginger, stir to combine! Enjoy!
